Pumpkin Spice Waffles with Maple Glazed Bacon

A new twist on a breakfast classic, leave off the bacon at your own peril!

The addition of the pumpkin to the waffle mix means that they need to cook a little longer than regular waffles. Truth is that the bacon is the star of this recipe!

Ingredients

1 1/2 cups white flour

3 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon ground nutmeg

1 teaspoon cinnamon

1 teaspoon allspice

1/2 teaspoon salt

2 eggs

1/4 cup Vermont maple syrup

1 cup canned pumpkin puree

1 1/4 cup milk

4 tablespoons melted butter

For The Bacon:

9 slices thick cut bacon

1 tablespoon Vermont maple syrup

1 teaspoon dijon mustard

1/4 teaspoon black pepper

Preparation

STEP 1

Mix together flour, baking powder, baking soda, spices, and salt in a large bowl

STEP 2

In a second bowl, add eggs, maple syrup, pumpkin, milk, and butter, beat well to blend

STEP 3

Add dry ingredients into wet ingredients and gently mix

STEP 4

Spoon into waffle maker and cook according to individual waffle iron directions. Top with butter and Vermont maple syrup

STEP 5

For maple glazed bacon, combine maple syrup, dijon mustard, and black pepper.

STEP 6

Place bacon in a single layer on baking sheet and brush glaze on top

STEP 7

Cook in a 350 degree oven 15 minutes or until bacon turns a deep dark brown and turns crispy and crunchy
